Simple Salmon Dinner: A Recipe Prepared by Chef Michael

Eating our salmon dinner in Edinburgh!

A healthy and easy meal to prepare while traveling. Head to a local farmer's market and pick up some fresh caught salmon. It will make a huge difference when it comes to flavor!



Ingredients:

  • Two lbs salmon

  • Lemons (2)

  • Handful of small carrots

  • Cremini mushrooms

  • Asparagus

  • Half a bag of small colored potatoes

  • Red onion

  • Olive Oil

  • Salt and Pepper

  • Fresh or dried dill


Step One: Prepping

  • Using a cookie sheet pan, cover it in aluminum foil

  • Preheat oven to 350 degrees

  • Carrots: Peel and slice lengthwise

  • Potatoes: Slice lengthwise

  • Asparagus: Cut off hard ends

  • Onion: Slice

  • Lemon: slice (1/2 inch slices)

Step Two: Roasting the Potatoes and Carrots

  • On the sheet pan, all your carrots and potatoes on one side

  • Drizzle olive oil over the tops of the carrots and potatoes

  • Season with salt and pepper

  • Roast for 15-20 minutes

Step Three: *Broiling/Baking Off the Dish

  • Once the hot pan comes out of the oven, set it on the counter

  • Place your asparagus on the end of the pan

  • Set the salmon in the center of the pan

  • Make room on the side of the pan and the top of the salmon for the onions

  • Place the mushrooms on one end or side of the pan

  • Place the sliced lemons on the salmon

  • Season with dill, salt and pepper

  • Drizzle a little more olive oil over the salmon and vegetables

  • Broil in the oven for 20 minutes or until the salmon is flaky

*if you don't feel comfortable broiling for 20 minutes, you can bake at 350 for 20 minutes
