
Simple Salmon Dinner: A Recipe Prepared by Chef Michael

A healthy and easy meal to prepare while traveling. Head to a local farmer's market and pick up some fresh caught salmon. It will make a huge difference when it comes to flavor!
Ingredients:
Two lbs salmon
Lemons (2)
Handful of small carrots
Cremini mushrooms
Asparagus
Half a bag of small colored potatoes
Red onion
Olive Oil
Salt and Pepper
Fresh or dried dill
Step One: Prepping
Using a cookie sheet pan, cover it in aluminum foil
Preheat oven to 350 degrees
Carrots: Peel and slice lengthwise
Potatoes: Slice lengthwise
Asparagus: Cut off hard ends
Onion: Slice
Lemon: slice (1/2 inch slices)
Step Two: Roasting the Potatoes and Carrots
On the sheet pan, all your carrots and potatoes on one side
Drizzle olive oil over the tops of the carrots and potatoes
Season with salt and pepper
Roast for 15-20 minutes
Step Three: *Broiling/Baking Off the Dish
Once the hot pan comes out of the oven, set it on the counter
Place your asparagus on the end of the pan
Set the salmon in the center of the pan
Make room on the side of the pan and the top of the salmon for the onions
Place the mushrooms on one end or side of the pan
Place the sliced lemons on the salmon
Season with dill, salt and pepper
Drizzle a little more olive oil over the salmon and vegetables
Broil in the oven for 20 minutes or until the salmon is flaky
*if you don't feel comfortable broiling for 20 minutes, you can bake at 350 for 20 minutes
